Disappointed to find the East Hill Plaza Tops (formerly P&C) seafood department closed early this evening on my way home from work, I glanced at the frozen fish bin to see if they had anything interesting. They have a new brand of boil-in-the-bag frozen fish fillet line, featuring salmon and tilapia as well as similar shrimp dishes, and this week they're buy one, get one free. Someone thoughtful at the store has also taped a $2-off manufacturer's coupon to each package. (Sometimes you find little coupon pads near a product where you can tear one off, but this is a nice extra touch.)

Not sure I'd bother at $9.99 a bag, though that's two servings, but at half that, it's well worth trying. I suspect the coupons are also not supposed to apply when there's another discount, or at least not both of them, but I'm not arguing. So, in the end, I bought two bags of salmon to try, one Cajun style and one in a Béarnaise sauce -- $19.98 worth for $5.99. Not a tough choice at all. One of the Cajun salmon fillets is boiling away as we speak.

I don't believe I've ever had any kind of fish in a Bearnaise sauce. Perhaps something to treat myself with on July 22nd, after I'm done with classes.

It's more commonly used on steak, but I've enjoyed Béarnaise on fish before, too.
