Peel me (214.2)
I read a bunch of web recipes, and then made some hard-boiled eggs before work this morning, enough to eat for a few days of breakfasts, on the theory that more eggs and less cereal would be better for me.

A few of the eggs weren't too bad to peel, but all of those optimistic "this will make your eggs so easy to peel!" web pages must be a crock.

Of course, now, I'm also seeing the suggestion that eggs should be left in the shell if they'll be left in the refrigerator for a while, and once peeled, they should be used immediately. I'm hoping mine survive a few days. I can't eat all six in one sitting! (Well, I probably could, but it seems like a bad idea.)

In other news, after 4pm I can call the town court to get the final word on my reporting instructions for tomorrow.

You should make egg salad with them so they don't go bad.

Adding mayo seems like it would not make them last longer. Might make me eat them faster, though. ;-)

I'm surprised you didn't just say I should be making kwishes instead. Still doing that regularly?

You need raw eggs for kwish.

And I got sick of it so I took a break for a while, but now I'm doing it again.

Mayo is acidic enough it doesn't go bad easily. What makes salads made with mayo (chicken, tuna, etc) go bad is the other stuff.

If you make your egg salad with salt, pepper, and other natural preservatives, I think it would possibly last longer than eggs alone.

We have so many eggs left over from easter and I know that they won't last this long even in the shell.

Maybe if I bury them they'll grown into Easter Egg trees.

Are they cooked? Raw eggs should last for months.

Yes, I cooked them to be used as Easter eggs. The problem with boiled eggs is that it's hard to tell when they start to go 'off.' I only want to make that mistake once, thank you very much!

Raw eggs will actually get dehydrated instead of going bad in the fridge. They're a little weird to cook with.

Hard boiled eggs should be fine for a few days in the fridge, peeled or not.

My understanding is that the fresher the eggs when boiled, the harder they are to peel cleanly.

I used three eggs that are at least a few weeks old, and three that are a week and a half old, so I figured I'd be out of the too-fresh zone. :-)

Is that a week and a half from the store or from the chicken? Store eggs are a bit older than farm eggs.

I guess almost two weeks from keeyoo, so probably no more than a few days older than that.

Some eggs are just easier than other eggs.

The last time I ended up with too many hard-boiled eggs I made green deviled eggs. It's amazing how much spinach I needed to add to make the eggs taste a little like spinach instead of a lot like eggs. It was a fun experiment aided in large part by a small food processor. I used the green goop that didn't fit in the eggs in a sandwich.

Yesterday I had a sandwich with tuna, hardboiled egg, pickles, and harissa. Needed some salt and pepper, but was otherwise good enough I'm going to try making my own as soon as I find a shop that carries harissa.

Sounds like a great reason to make devilled eggs! They'll be gone in a flash.
