It turns out that accidentally leaving the tomato sauce in the Crock-Pot overnight (on warm, rather than low, thank goodness) results in a really intense roasted flavor! I'm going to put some in the refrigerator to use this week, and toss the rest in the freezer in small containers for later.

Maybe it'll even be good for shakshuka! I happen to have some eggs on hand, though I haven't managed to get hold of any fresh local ones lately.
